Ohmic pasteurisation

we at FUNKIN COCKTAILS use ohmic pasteurisation for all of our fruit purées. This reduces the exposure of fresh fruit to heat. The temperature rises to the required level and the product is instantly chilled to avoid the negative effects of heat of fruit.

How to Make Your Venue More Sustainable ... recycle, reuse, repeat ... Save mountains of waste by getting full use out of stock, minimising fruit orders and cutting down on extravagant and superfluous garnishes ... Use perishable ingredients in multiple drinks ... Track your fruit usage and record it ... Use atomisers for garnishes ... Use garnishes that don’t spoil easily ... Make sure to always use the oldest ingredients first.

FUNKIN COCKTAILS ... is mixing up sustainability for the planet with the planting of its first-ever Tiny Orchard in Mutton Brook, North London. In partnership with environmental charity Earthwatch, this innovative project combines environmental stewardship with FUNKIN’s signature cocktail creativity, transforming a local green space into a hub for sustainability and community connection.
